Ireland has long since been synonymous with Irish Dancing (Riverdance), great drink (Guinness, Irish whiskeys) and being the land of A Hundred Thousand Welcomes.
And yet Irish cuisine has never properly taken center stage as having it's own identity. If asked, most people around the globe would list 'bacon & cabbage', 'Irish Stew', and of course 'black & white Pudding' as being the main Irish food stuffs and dishes that spring to mind.
The Druid Chef, Rory Morahan, challenges this and is determined to bring Irish Celtic Cuisine to the forefront of the culinary world, identifying Irish food as it once was and blending it with some more contemporary cooking concepts. He calls this concept, CELTIC CUISINE.
Within the concept of Celtic Cuisine there are structures and styles, which define its art. These give a better understanding of the philosophy of the food and are nourishment for both the mind and body.
